Dinner: Shrimp Scampi

Tonight for dinner I made Shrimp Scampi

It was DELICIOUS.
The best part is.... it took 2 minutes in the Pressure Cooker!

If you have a Pressure Cooker, you really MUST purchase this cookbook. 
The recipes are delicious and very easy to make.









THE FEEDBACK: 10 out of 10
Even Kid-Mo ate it....yes, shrimp and all!  
(Okay.. I told him they were Bubble Guppies from NickJr...lol)

Improvements: I think next time I would add some heavy cream at the end to make the sauce a little thicker and creamier

Mom with a Camera: Preemie Feet

He was born 6 weeks early at a tiny 3 lbs 15 oz
(but not as small as "KidMo" who was born 10 wks early at 1 lb 3 oz)

I would love to say that the photo below is of me and Baby-Mo but I'm too busy loosing handfulls of my hair and fighting my post- baby weight to be this cute right now.... maybe next year folks.

Back to reality...

My cute little 3 month old baby boy just loves to be held. Every night around 5 or 6pm he is fussy and it's hard for me to make dinner.  I figured a baby sling would be a great way to keep him happy while being able to move around the house. 

The REVIEW:  The product isn't too bad.  It is very basic.  It is actually just a thick piece of fabric sewed together.  Baby-Mo even fell asleep once in it!  SCORE!  On the negative side, my shoulder hurt for the rest of the night from the weight of the baby.

The GOOD:  The product is made well and I'm not worried about it ripping apart.  They are also made out of stylish material and look cute.

The BAD:  Not very comfortable for long term use. Also, It takes a while to get the baby situated correctly. And, if the baby is angry, I've learned it is impossible to get him in the sling correctly. And it just made Baby-Mo even more angry.  That is NOT a good thing.

Overall, I think it's a good buy.  I think Baby-Mo will do well with it once he is old enough to sit and can just hang on my hip a bit.

Alcohol Cooking Substitutions

If you are "Mo" (aka Mormon) like me, the idea of cooking with Alcohol isn't that favorable. I completely understand that the alcohol cooks out during the cooking process. And, I'm okay with that.

But, what's a girl to do when she doesn't OWN any alcohol to cook with! That is the problem my dear friends!

I found THIS website today that lists Alcohol Cooking Substitutions.

I used this website tonight as my recipe called for Brandy.  A quick substitution of Apple Juice did the trick.

Dinner: Ground Beef Stroganoff - Pressure Cooker

We have found another NEW favorite dish for our Pressure Cooker!

Ground Beef Stroganoff!



This recipe comes from the cookbook: Slow Food Fast, by Bob Warden.

I can't say enough good things about this cookbook! It's amazing and the recipes are easy too!


Ingredients Needed:

1 tablespoon butter

1 pound lean ground beef

1/2 onion, diced

2 celery stalks chopped

4 ounces mushrooms, sliced

1 teaspoon beef base mixed into 1/2 cup water (or 1/2 cup beef broth)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon allspice

1 1/2 cups sour cream

salt & pepper to taste

egg noodles, cooked separately



1. Heat butter in the pressure cooker on the brown setting until it sizzles. Add ground beef. (If your pressure cooker doesn't have this setting, just Brown the meat on the stove top)





2. Once beef is browned, try to drain the fat from the pot. Then add onion and celery. (Note- I substituted onion powder in this step so my 4 year old would eat it since he doesn't like onion)

3. Stir for 2 minutes until onion and celery soften



4. Add remaining ingredients except for sour cream and egg noodles.



5. Lock pressure cooker, set to high and cook for 6 minutes. (During this step, boil water and cook egg noodles on stove top)



6. Let the pressure cooker release naturally for 10 minutes and then quick release for any remaining pressure. Stir in Sour Cream, salt and pepper and serve immediately over egg noodles.

This is for SURE a new family favorite. KID-Mo gobbled it up as well. We added some pre-made red marinara sauce to his and he really loved that.

SUGGESTIONS: You could easily make this recipe on a stove top if you don't have a pressure cooker! Give it a try!

ThredUP - A great idea for Kids Clothing & Toys

I've stumbled across the COOLEST website! If you have kids, you MUST check it out.

It is called thredUP


Here is what it is all about:


You post a box of your own unwanted kids clothing or toys, and in exchange you pick a box that someone else has posted. It is like an online clothing exchange!
You pay $5 plus shipping when you select the box you want.
I joined last week and immediately found a lot of boxes I would be interested in.
I also earned my first box for FREE! I thought, what do I have to loose. I'll give it a try.

I selected a box with a boy's suit, tie, pair of church pants, button down shirt and ski jacket!

The "seller" also included a cute set of lego blocks for free. KID-Mo just loved the box of clothes and the extra toy for him. Everything was in perfect condition. I plan to get the suit dry-cleaned of course, but I'm super excited by my new finds!

You can search their website by size and gender or by specific item if there is something you are looking for. They also send you a set of USPS shipping boxes for the clothing that you post. When it is time ship the items you put them in the free box they sent, print out the shipping label and wait for the post man to come pick it up. (remember- the person who picks the box, pays for the shipping- no cost to you!) It is easy!

Kid's Dinner: Corn Dogs

The Mo-Momma family is not always fancy for dinner.
I thought I'd share with you a new Kid-Friendly dinner that we had this week.



Break out your favorite sandwich maker.
Then, mix up a package of cornbread mix. Our favorite is Marie Calendar's.
Pour the cornbread mix into the sandwich maker, drop half of a hot dog inside, and bake for 10 minutes.

Kid-Mo was especially pleased with this meal. He devoured it - leaving tiny cornbread crumbs everywhere on the table and floor. This meant that Dog-Mo also had a yummy snack later that night as she helped clean up his mess.
